Elongated and cylindrical muscle, ending in a point at one end. Obtained from the lumbar area attached to the loin and close to the ham. Coming from our own 100% Iberian pigs selected from birth, raised in freedom and with an exquisite diet prepared in our facilities based on natural cereals, as well as grasses, tubers, roots offered by our pastures. Red in colour with little infiltrated fat.
Noble piece without fat, of constant quality and firmness in the cut.
It is recommended that it be grilled and served with a sauce (boletus, roquefort, pepper...) or baked at a low temperature and seasoned with aromatic herbs.
