A deep red piece of meat obtained from the oval-shaped head of the loin. Very infiltrated in fat, with fine muscle fibres that make it very tender and pleasant to the palate. It comes from our own 100% Iberian pigs selected from birth, raised in the wild and with an exquisite diet prepared in our facilities using natural cereals, as well as the grass, tubers and roots offered by our pastures.
TASTING NOTE
One of the most noble and exclusive pieces of the 100% Iberian pig.
It is recommended to make it in medallions or halves, to mark on the grill or roast the whole piece. It goes very well with foie gras and ham shavings. ¨Un real pleasure for meat lovers¨.
