DESCRIPTION
Part of the high rib of the pig to which the loin is kept attached, removing part of the intercostal meat to obtain a crown shape as recognised in traditional preparations. Coming from our own 100% Iberian pigs selected from birth, raised in freedom and with an exquisite diet prepared in our facilities based on natural cereals, as well as grasses, tubers, roots offered by our pastures.
TASTING NOTE
This product combines the texture and softness of the loin with the flavour of the rib. It is recommended to prepare it grilled, in chops or roast the whole piece with aromatic herbs such as rosemary.
