This sake is brewed with Fukui yeast (FK-801C), developed at a laboratory in Fukui Prefecture. Made with rice "Yamada-Nishiki" from Obama and the subterranean water of the Minami River that flows through Obama.
It has a refreshing and expansive fruity aroma reminiscent of green apples, and in the mouth, you can feel the moderate sweetness like a melon and the umami of rice, making it a beautifully balanced sake.
The original label design for the new Daiginjo Wakasa was created by a local high school girl who wants to work in design in the future. She said, "The steamed rice looked like a shining jewel," and her thoughts were incorporated into the design.
