Amaranth is a gluten free whole grain belonging to the genus Amaranthus. It is grown in various parts of the world and especially in Southern India. Amaranth is a pseudocereal but used in culinary applications like other cereal grains. It is regarded as a complete protein as it contains all 9 essential amino acids. It contains almost double the amount of protein compared to rice and corn. Amaranth has anti-infammatory and cancer-preventive properties. The most popular reason for which Amaranth is consumed today is its gluten free nature. It can provide 20% of daily recommended value of magnesium and about 50% for manganese.
